Cook With Me – Coconut Lime Rice Pilaf

This is one of my favourite rice dishes. It is flavourful, zesty and very delicious! It’s a family favourite, even with all the onions. You will want to bookmark my page after you try this once, because you’ll want to try it again. It also uses Virgin Coconut Oil from Tropical Traditions. Love that stuff!

Coconut Lime Rice Pilaf…
4 tbsps. virgin coconut oil
1-1/2 cups chopped onion (about 1 large)
3 cloves garlic, crushed
1/4 cup celery, finely chopped
3 cups uncooked brown rice
6 cups water
1-1/2 tbsps. finely shredded lime peel
1-1/2 tsps. sea salt
1 tsp. ground black pepper
1/2 tsp. paprikaMelt butter in dutch oven and add in onions and garlic; cook until onions are tender. Pour in the rice, water, lime peel and spices. Cook until the rice is tender, about 45 minutes. Serve topped with grated lime peel and ground black pepper on top.


You can also use lemon for this recipe, as both are good. But since I didn’t have any, I used lime. I prefer lime over lemon anyhow. But you can use lemon or lime to flavour this delightful dish.
